Meatless Mondays: Pesto penne w/ broccoli, swiss chard and chanterelle mushrooms

So I'm trying this thing where I have one meatless meal a week.  

I know... me?! The girl who'd take down a juicy slab of steak any day is going meatless? Yeah, I know... The carnivore in me is just as skeptical. But I made a new year's resolution to be healthier so I guess that also meant eating healthy. Plus it should be a fun challenge in the kitchen. Vegetables have always been just a boring, side dish for me - something whipped up real quick so I'd be able to go number two. So it should be interesting to get creative and move it into the limelight.  

So here's my first stab at this - penne pasta mixed with broccoli, red swiss chard, chanterelle mushrooms, brought together with a light pesto sauce and finished with a soft poached egg. Oh, and dusted with pecorino! It was my first time having red swiss chard and I must say, I'm a fan! It tastes like spinach (and fyi it also leaves your tongue slightly itchy if you eat too much) but sweeter. Plus who can turn down that beautiful red color? I think I'm going to try to incorporate this into my diet more, and hopefully you'll see more of it on the blog too!


(Okay, fine... I'll admit it. I made this mostly because I ran out of meat at home and I didn't want to venture out into the cold. But hey, it got me started on my goal, right?)
